Course Description

Carbohydrates  or  saccharides  are  the  most  abundant  class  ofbiomolecules  and  they  are  used  to  store  energy,  as  well  as  serving  other  important  functions.  Saccharides,  especially  polysaccharides  are  important  class  of  nutrient.  The  course  will  provide  student  to  learn  and  understand  the  fundamentalsof  several  polysaccharides  such  as  Starch,  Alginate,  Pectin,  Carrageenan,  Chitin/chitosan  as  well  as  the  fundamental  knowledge  of  saccharides.

Requirements  for  taking  this  course:
The  course  mainly  contains  the  explanation  of  polysaccharides  based  on  chemistry,  so  it  is  essential  to  have  basic  knowledge  of  chemistry.

TOEFL  ITP  505以上
TOEFL  iBT  60以上
TOEIC  580以上
IELTS  5.0
CEFR  B1

Course Objectives

①Viewpoint  of  knowledge  /  skill
After  studying  this  course  the  students  shall
・have  knowledge  of  fundamental  chemistry  of  saccharides  (mono-,  oligo-  and  polysaccharides).
・understand  to  identify  the  structure  of  saccharides.
・be  familiar  with  natural  occurring  polysaccharides.
・recognize  the  importance  of  polysaccharides  in  food  science.
②From  the  viewpoint  of  ability  such  as  thinking  ability,  judgment  ability,  expression  power
・The  students  can  explain  by  themselves  what  they  understood  in  verbally  understandable.
③Viewpoint  of  subjective  attitude
・The  students  can  look  back  on  their  own  learning  and  list  appropriate  improvement  points.
